These sweet oven roasted berries make an exceptional topping for everything from oatmeal, to desserts, to French toast! I take a fresh blend of strawberries, raspberries, blackberries, and blueberries and roast them in the oven until they are soft, syrupy, and sweet like candy!

Sweet Oven Roasted Mixed Berries

Though this recipe may be simple, it tastes anything but! When roasted in the oven with a little sugar, berries break down into a sweet, syrupy, serving of goodness!

Once you try the berries, you'll want to pile them on everything from pound cake to pancakes – so trust me when I say you HAVE TO try them!

🥘 Ingredients

The fresher the fruit, the better! Always rinse your fruit before using.

  • Strawberries - 2 cups of sliced strawberries.
  • Raspberries - 2 cups of raspberries.
  • Blackberries - 2 cups of blackberries.
  • Blueberries - 2 cups of blueberries.
  • Sugar - 2 tablespoons of granulated sugar. Use a sugar substitute if desired, but I like TrueLemon for this roasted berries recipe!
  • Lemon Juice (optional) - 2 tablespoons of lemon juice and zest, if desired.

🔪 Instructions

The steps for these roasted berries are incredibly simple. You will need a rubber spatula for mixing, some foil, and a baking sheet.

  1. Preheat. First, preheat your oven to 450°F(230°C).
  2. Mix berries. In either a mixing bowl or on a foil-lined baking sheet, 2 cups each of strawberries, raspberries, blackberries, and blueberries. Sprinkle 2 tablespoons of sugar and the optional lemon juice and zest over top. Spread the berries into an even layer on the baking sheet.
  3. Roast. Once the oven has preheated, roast the berries for 15 minutes then stir and roast another 10-15 minutes.
  4. Cool. Remove your berries from the oven and allow them to cool slightly before serving. Or, cool the roasted berries completely before transferring to an airtight container to store in the refrigerator.

You haven't lived until you try these roasted berries on one of my gourmet s'mores. You can also keep a jar in the fridge to use whenever you need! Enjoy!

💭 Tips & Notes

  • Sugar is important! You need some for the great roasted effect and flavor we want in this recipe! Tarter berries may need more sugar while sweeter berries may need less.
  • Don't swap syrup or honey for sugar, while it may taste good it won't give you the results you want and can turn the fruit brown.
  • Berries are best. A blend of other fruit is wonderful, but they don't all roast at the same rate. A mix of apples and berries is divine, it just doesn't quite cook up evenly.
  • Add spices and aromatics! Things like whole star anise, cinnamon sticks, cardamom pods, and even whole cloves would be wonderful but will need to be carefully removed before serving.
  • Try brown sugar! Switch the white, granulated sugar out for either light brown sugar or dark brown sugar for a richer flavor.
  • Cut down the roasting time if you like extra syrupy berries! Check your roasted berries after the first 15 minutes of roasting, if it looks good to you with a little more liquid you can pull them out at that time.
  • For less liquid, lower the oven temperature to 350°F(175°C)to continue roasting your mixed berries and reduce the liquid(without browning the berries)if desired.
  • Storing: The berries should be kept cold in the refrigerator while storing. Use an airtight container or mason jar to keep them fresh for up to 5 days.

Ingredients

  • 1 cup strawberries (sliced)
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 cup blueberries
  • 2 tablespoon sugar (more or less as needed, *see note)
  • 2 tablespoon lemon juice (zest and juice from one lemon)

  • Preheat your oven to 450°F (230°C) and line a rimmed baking sheet or 9x13 pan with aluminum foil for easy cleanup.

  • Meanwhile, combine equal amounts of strawberries, raspberries, and blackberries. Sprinkle berries with sugar and optional lemon juice and zest, if using. Spread berry mixture out on a baking sheet lined with foil.

Notes

  • Add sugar. You need some for the great roasted effect and flavor we want in this recipe! However, add sugar based on the sweetness of the fruit you are using. Tart fruits should have more sugar added, and sweet fruits can have the sugar spared slightly.
  • Honey and maple syrup, while tasty and wonderful, also don't quite yield the same results. They can brown and turn your vibrant fruits an unattractive color.
  • Mixing fruits works quite wonderfully, but some fruits will cook faster (that's why we use berries together). A mix of apples and berries is divine, it just doesn't quite cook up evenly.
  • Add aromatics like whole star anise, cinnamon sticks, cardamom pods, and even whole cloves (but these need to be extra carefully picked out before serving!).
  • Switch the white, granulated sugar out for either light brown sugar or dark brown sugar for a richer flavor.
  • Check your roasted berries after the first 15 minutes of roasting, if you like your berry blend syrupy you can remove them at this point and allow them to chill.
