How to Boil Eggs

For some people the thought of boiling eggs and then peeling them can be a nightmare. When I was first married I didn’t know too much about cooking but I knew how to boil an egg. Here’s the way I like to boil eggs:

  1. Place the eggs in a pot and cover them with COLD water.
  2. Heat over high heat until the water begins to boil.
  3. Allow the eggs to boil for two minutes.
  4. Remove the pot from the heat and cover with the pot’s lid.
  5. Let the eggs sit in the hot water for another 10 minutes.
  6. Drain the eggs and serve them warm OR add cold water to the pot along with a handful of ice cubes to allow them to cool.

Recipe Substitutions and Variations

Swap out the mayonnaise for Greek yogurt or sour cream for a healthier twist.

Add a little heat to the mixture by using spicy mustard or hot sauce in the filling.

Try adding bacon bits, diced ham or even smoked salmon!

Step-by-Step Directions

Step 1: Slice the eggs in half and gently scoop out the yolks into a separate bowl. For smooth results, use a melon baller to easily remove the yolks without damaging the egg whites. Mash the egg yolks thoroughly so they're not lumpy.

How to Fill the Eggs

Step 2: For filling the egg white halves, you have options! Use two spoons for simplicity, or pipe in the yolk mixture for a fancier presentation. To easily fill a pastry bag, place it inside a tall drinking glass, fold the top over the rim, and spoon in the filling. This keeps things clean and makes piping a breeze.

Serving Tips

Chill the eggs for at least an hour before serving. This lets the flavors blend and the filling set for the best taste and texture.

Then, place the deviled eggs on a festive egg platter and sprinkle with chopped chives for a final touch.
